Lemon meringue pie

A lemon meringue pie, with a lemon appearance on top. And it has te BEST Italian meringue on top! The meringue is super soft but very firm. You can make 10 servings with this recipe!

Preptime: 1h 30 minutes

Cooktime: 40 minutes

Ingredients

For the dough:

  • 90 grams of butter
  • 40 grams of eggs
  • 75 grams of powdered sugar
  • 190 grams of flour
  • pinch of salt

For the lemoncurd:

  • 120 grams of granulated sugar
  • 3 egg yolks
  • 2 lemons for the juice
  • 1 lemon zest
  • 15 grams corn flour

For the Italian meringue:

  • 1 cup sugar
  • 4 egg whites (room temperature)
  • 1/3 cup water

Instructions

For the dough:

  1. Mix all the ingredients together and let the dough ball rest for 20 minutes in the fridge.
  2. Roll out the dough and poke holes in the bottom. Put it in a baking tin and put baking paper over it and place baking pearls (or dried chickpeas or rice) in it. This ensures that the dough does not rise during baking.
  3. Bake for 15 minutes with baking pearls and 3 minutes without baking pearls on 170 degrees celsius.

For the lemoncurd:

  1. Cook all ingredients together till it’s thickened. Make sure you cook it for 25-30 minutes! Then replace it in a bowl and let it cool down.

For the Italian meringue:

  1. Beat the egg whites till it forms soft peeks
  2. Cook the water with sugar till it hit’s 116 degrees celsius. Then add the sugar directly to the softened egg whites.
  3. Beat till you have a thick, doubled in size meringue. Make sure you have patience for this!

For decorating:

  1. Put the lemoncurd on the pie and spread it all over.
  2. Place the meringue in a piping bag and pipe a lemon mold on top of the cake (see the tiktok video).
  3. Now burn the top of the meringue with a burner until golden brown and ejoy!
