Pumpkin spice donuts

Pumpkin shaped donuts with pumpkin spice filling! You can look at the video on tiktok for some more instructions. I’m in love with this recipe. It includes a soft donut with a sweet pumpkin spice filling. It’s so good, especially for the fall season! You can make 10 servings with this recipe.

Preptime: 2 hours

Ingredients

For the dough:

  • 190 grams of warm milk
  • 7 grams of yeast
  • 40 grams of granulated sugar
  • 2 grams salt
  • 1 large egg
  • 375 grams of flour
  • 45 grams of unsalted butter

For frying:

  • 400 ml oil (vegetable, olive or sunflower)

for the filling:

  • 150 grams of unsalted butter
  • 100 grams of powdered sugar
  • 250 grams of pumpkin puree
  • 4 tablespoons cinnamon (pumpkin spice herbs or spiced bisquit herbs)

For the decoration:

  • 50 grams of granulated sugar
  • 4 tbsp cinnamon
  • 2 pieces of dark chocolate

Instructions

  1. Mix the yeast, warm milk and sugar and cover it with foil. Now let it rest for 10 minutes.
  2. In a bowl add the flour, salt, egg and the yeast mixture. knead till the dough doesn’t stick to the side of the bowl anymore.
  3. Now add the butter, kneed the dough till all the butter is incorporated. It can take some time, so be patient. It will take about 8 minutes.
  4. Cover the bowl with foil and let the dough rest for 1 hour in a slightly warm place. I always put my bowl on the couch with some blankets around it.
  5. After 1 hour, kneed all the air out of the dough and make 10 balls out of the dough. Cut 6 snips in the balls, so that the donut gets a pumpkin shape. Let the pumpkin balls rest for 30 minutes.
  6. Fry the pumpkin donuts in 180 degrees celsius. Fry each side for about 1-2 minutes, till it’s golden brown. And let them cool down completely after.
  7. For the filling, we’re gonna mix the butter and powdered sugar till it’s smooth and fluffy. This take about 10 minutes.
  8. Add the pumpkin puree and pumpkin spice herbs.
  9. Put the filling in a piping bag, poke a hole in the bottom of the donut and fill the donut with the filling.
  10. Roll the donuts with both sides in the cinnamon sugar. Cut the chocolate into little sticks and push them into the top of the donut.
