Ingredients
For the dough:
- 180 grams of warm milk
- 7 grams of yeast
- 40 grams of granulated sugar
- 2 grams salt
- 1 large egg
- 375 grams of flour
- 45 grams of unsalted butter
For frying:
- 400 ml oil (vegetable, olive or sunflower)
For the marshmallow fluff filling:
- 1 cup sugar
- 1/3 cup water
- 3 egg whites
For the rich chocolate filling:
- 3 egg yolks
- 1 tablespoon flour
- 1 tablespoon cornstarch
- 6 tablespoons sugar
- 75 ml milk
- 1 teaspoon vanilla extract
- 20 grams of milk chocolate
- 5 tablespoons cacao powder
For the decoration:
- 80 grams of milk chocolate

Instructions
- Mix the yeast, warm milk and sugar and cover it with foil. Now let it rest for 10 minutes.
- In a bowl add the flour, salt, egg and the yeast mixture. Knead till the dough doesn’t stick to the side of the bowl anymore.
- Now add the butter, kneed the dough till all the butter is incorporated. It can take some time, so be patient. It will take about 8 minutes.
- Cover the bowl with the foil and let the dough rest for 1 hour in a slightly warm place. I always put my bowl on the couch with some blankets around it.
- After 1 hour, kneed all the air out of the dough and make 8 balls out of the dough. Cut 1 snips in the ball and make a heart shaped donut. Let the donuts rest for 30 minutes.
- Fry the donuts in 180 degrees celsius. Fry each side for about 1-2 minutes, till it’s golden brown. And let them cool down completely after.
- For the marshmallow filling, we’re gonna make a Italian meringue. Put 3 egg whites in a bowl and whisk till it has ‘soft’ peaks. Add the sugar and water in a saucepan and heat till 118 degrees celsius. Add the sugar syrup to the egg whites. Now whisk on a high speed till it’s doubled in size and there are stiff peaks.
- For the rich chocolate filling, we’re gonna make a chocolate pastry cream. Warm up the milk and the vanilla extract. In a bowl whisk the 3 egg yolks, flour, cornstarch and sugar. Add the warm milk and mix till it’s a smooth batter. Put the batter in a saucepan and heat till a thick pastry cream forms. Now add the chocolate and cacao powder, whisk till all the chocolate is incorporated.
- Now fill two piping bags and fill the donut with the two fillings. Make sure you put enough filling in the donut.
- Melt the milk chocolate. Dip the donut in the melted milk chocolate and directly dip in the cookie crumbs.
