Strawberry cream cupcakes

The perfect cupcake in combination with fresh strawberries and fluffy cream frosting. They are super delicate and light to eat! It’s perfect for a birthday party. You can make 12 servings with this recipe.

Preptime: 40 minutes

Cooktime: 14 minutes

Ingredients

  • 125 grams of room temperature butter
  • 2 eggs
  • 1 bag of vanilla sugar
  • pinch of salt
  • 125 grams of white sugar (basterd)
  • 125 grams of self raising flour
  • 2 teaspoons of lemon zest
  • 2 teaspoons of milk
  • 500 ml heavy cream
  • 100 ml condensed milk
  • 2 tablespoons of powdered sugar
  • 250 grams of strawberries

Instructions

  1. Preheat the oven on 185 degrees celsius.
  2. Mix the butter and sugar, till it’s fluffy and airy.
  3. Add the eggs one at a time.
  4. Add the vanilla sugar, flour, salt, milk, lemon zest. And stir until the batter is well mixed.
  5. Bake the cupcakes for 14 minutes. Make sure that you turn the cupcake tin halfway, so that all the cupcakes are well cooked.
  6. Make sure your heavy cream is cold before whipping it. Add the powdered sugar to the heavy cream and beat until it becomes whipped cream.
  7. Put 1/3 of the whipped cream in another bowl. And add some diced strawberries to that (we are going to fill the inside of the cupcake with this)
  8. Make a hole in the center of the cupcakes. (make sure they are completely cooled down)
  9. Put the strawberry cream (that we have separately put in a bowl) in a piping bag.
  10. Fill the holes with the strawberry cream.
  11. Now put the whipped cream ‘without’ strawberry in a piping bag. And put this on the top of the cupcake as decoration.
  12. Now cut the remaining strawberries in halves. And decorate the cupcake with the strawberries.
