
The perfect cupcake in combination with fresh strawberries and fluffy cream frosting. They are super delicate and light to eat! It’s perfect for a birthday party. You can make 12 servings with this recipe.

Ingredients
- 125 grams of room temperature butter
- 2 eggs
- 1 bag of vanilla sugar
- pinch of salt
- 125 grams of white sugar (basterd)
- 125 grams of self raising flour
- 2 teaspoons of lemon zest
- 2 teaspoons of milk
- 500 ml heavy cream
- 100 ml condensed milk
- 2 tablespoons of powdered sugar
- 250 grams of strawberries
Instructions
- Preheat the oven on 185 degrees celsius.
- Mix the butter and sugar, till it’s fluffy and airy.
- Add the eggs one at a time.
- Add the vanilla sugar, flour, salt, milk, lemon zest. And stir until the batter is well mixed.
- Bake the cupcakes for 14 minutes. Make sure that you turn the cupcake tin halfway, so that all the cupcakes are well cooked.
- Make sure your heavy cream is cold before whipping it. Add the powdered sugar to the heavy cream and beat until it becomes whipped cream.
- Put 1/3 of the whipped cream in another bowl. And add some diced strawberries to that (we are going to fill the inside of the cupcake with this)
- Make a hole in the center of the cupcakes. (make sure they are completely cooled down)
- Put the strawberry cream (that we have separately put in a bowl) in a piping bag.
- Fill the holes with the strawberry cream.
- Now put the whipped cream ‘without’ strawberry in a piping bag. And put this on the top of the cupcake as decoration.
- Now cut the remaining strawberries in halves. And decorate the cupcake with the strawberries.
