Carrot cake

This carrot cake is really delicious. It is a very creamy and airy cake with a light warm cinnamon taste. The frosting on the cake goes perfectly with this! It taste as delicious as it looks. You can make 12 servings with this recipe.

Ingredients

  • 2 eggs
  • 1/2 cup buttermilk
  • 0,5 cup vegetable oil (olive oil or sunflower oil)
  • 1 cup white sugar
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoon cinnamon
  • pinch of salt
  • 1 1/3 cup flour
  • 1 1/2 teaspoon baking soda
  • 1 tablespoon of lemon juice
  • 1 1/3 cup grated carrot
  • 1/2 cup small cubes of pineapple
  • 1/2 cup sliced walnuts
  • 1/2 cup grated coconut
  • 200 grams of philadelphia
  • 100 grams of powdered sugar
  • red and yellow food colouring

Instructions

  1. In a bowl mix the eggs, buttermilk and vegetable oil.
  2. Add the sugar and vanilla extract, mix till combined.
  3. Add the cinnamon, salt, flour, baking soda and lemon juice. Mix all the ingredients till combined.
  4. Gently mix in the carrot, pineapple, walnuts and coconut.
  5. Now put baking paper in the oven dish. Put the cake batter in the oven dish of about 20 by 30 centimeters.
  6. Bake the cake in the oven at 180 degrees Celsius for 35 minutes.
  7. Let the cake cooldown completely.
  8. Put the philadelphia and the powdered sugar in a bowl. Mix this until you have a smooth cream. Put a portion of the cream in a separate bowl and make it orange with food colouring. Put the orange cream in a piping bag.
  9. Put the white cream on the cake. For the pattern, make orange stripes lengthwise. Then you pull a skewer through it a few times to make the pattern (see the tiktok video).
  10. Now cut the cake into desired pieces and enjoy!
