These cakes are very popular in the Netherlands and are often bought in the supermarket. But how fun are they to make yourself. It’s vanilla cake with a pastry cream filling. You can top it with some powdered sugar and then enjoy it. You can make 6 servings with this recipe.

Ingredients
For the cupcake mixture:
- 50 grams of butter (room temperature)
- 50 grams of white sugar
- 1 egg (room temperature)
- 1 teaspoon vanilla extract or 7 grams of vanilla sugar
- pinch of salt
- 65 grams of flour
- 1/2 teaspoon baking powder
For the pastry cream filling:
- 500 ml milk
- 1 teaspoon vanilla extract
- 100 grams of sugar
- 2 egg yolks
- 45 grams of cornstarch
Instructions
- First we’re gonna make the pastry cream filling. In a saucepan heat up the milk with the vanilla extract. In the meantime mix in a bowl the sugar, the egg yolks and the cornstarch. When the milk is warm add it to bowl off the egg mixture.
- Now put the whole mixture back in the saucepan. Heat it up till the mixture cooks. Make sure you stir enough, otherwise the mixture won’t be smooth. When the mixture is thickened, turn off the heat.
- Transfer the pastry cream to a bowl and cover it with foil. Let it cool down completely.
- Now we’re gonna make the cupcake mixture. Put all the ingredients (butter, white sugar, egg, vanilla, salt, flour and baking powder) in a bowl, and mix till everything is combined. Don’t overmix the mixture.
- Now fill 6 cupcake tins with the batter. Make sure you use baking paper shapes or grease the cupcake shape well with butter and dust with flour.
- Transfer the pastry cream in a piping bag and pipe in each cupcake a little bit of pastry cream. Make sure that the pastry cream is only in the center of the cupcake and doesn’t touch the sides of tin.(see the tiktok video)
- Now bake the cupcakes for 15 minutes on 180 degrees celsius.
- Let them cool down, top it with some powdered sugar, and you’re done!
