These kerststollen are so nice for Christmas. Normally I don’t like it that much but these are really delicious. They are super airy and have a delicious filling of a pecan paste. It’s a really fun process to make. You can make 5 servings with this recipe.

Ingredients
For the filling:
- 100 grams of pecan nuts
- 100 grams of sugar
- 20 grams of egg
- little bit of lemon zest
- pinch of salt
For the dough:
- 175 grams of flour
- 4 grams of dry yeast
- 15 grams of white sugar
- 3 grams of salt
- little bit of lemon zest
- 30 grams of butter (room temperature)
- 90 grams of water
- 175 grams of raisins
For the finish:
- 1 egg
- pinch of salt
- granulated sugar with cinnamon
- Powdered sugar
- cornstarch
Instructions
- Soak the raisins in warm water for 20 minutes. After 20 minutes, place them between two tea towels and let them dry.
- Mix for the dough the flour, yeast, sugar, salt, lemon zest and butter. Do this for about 3 minutes, make sure that the yeast doesn’t touch the salt.
- After 3 minutes add the water little by little. Do not use all the water, if the dough will be too wet. Kneed the dough long enough until you can make a membrane of the dough. Now fold in the raisins.
- Take the dough out of the bowl and kneed it a little with the hand, till all the raisins are fold in. Make sure al the raisins are covered with dough.
- Make 5 balls out of the dough. Cover the balls with a towel and let them rest for 10 minutes.
- Ball up the balls again and let rest for another 10 minutes.
- For the filling: mix the sugar, egg, pecan nuts, salt and lemon zest. Do this in a chopper, till it forms a pecan paste. Now make 6 cylinders of pecan paste that we will fold into the balls.
- Now you lightly roll out each ball and make sure that the dough is a bit thinner in the middle.
- Place a cylinder in the center of each ball and fold the dough to close it.
- Lay them on a baking tray and brush them with a thin egg wash (egg with a pinch of salt). cover with foil. Let them rest for about 45 minutes.
- Bake them on 200 degrees celsius for about 10 minutes.
- After baking, brush with melted butter and sprinkle with cinnamon sugar if desired. After cooling, dust with icing sugar mixed with cornstarch.
