You need to try these typical dutch cookies, they are called ‘speculaasjes’. They are delicious with a cup of tea. This recipe is gluten free and very easy to follow. I hope you will enjoy them, have fun! You can make 15 servings with this recipe.

Preptime: 30 minutes

Cooktime: 20 minutes

Ingredients

  • 100 grams of gluten free bake mix (schar mix c)
  • 100 grams of rice flour
  • 100 grams of butter (room temperature)
  • 125 grams of brown sugar
  • 1 egg (room temperature)
  • 1 teaspoon baking powder
  • 1 tablespoon gingerbread spices
  • 7 grams of vanilla sugar

Instructions

  1. Side note: To get the real gingerbread shape you need a gingerbread board. Make sure you soak the board in oil and use rice flour if the dough sticks to the mold.
  2. Mix all ingredients together in a bowl, till you have a ball of dough. Let the dough rest for 20 minutes in the fridge.
  3. Now you can make the cookies, by pressing the dough into the mold. Then carefully remove the cookies from the mold. Then place them on the baking tray with baking paper underneath.
  4. Bake the cookies for 20 minutes on 175 degrees celsius. And enjoy with a cup of tea!
