One of my favorites! Do you happen to have a croissant left over and want to make something out of it? Then make an almond croissant! I made the croissants myself, but of course you don’t have to. In this recipe I show you how to make frangipane. This is an almond mixture that we put on the croissant. Finished with some almond shavings, super tasty! You can make 6-8 servings with this recipe.

Preptime: 10 minutes
Cooktime: 5 minutes
Ingredients
- 1/2 cup/ 50 grams almond flour
- 1/4 cup/ 55 grams unsalted butter (room temperature)
- 1/4 cup/ 50 grams of light brown sugar
- 1 egg (room temperature)
- 1/2 teaspoon almond extract
- 2 tablespoons flour
- pinch of salt
- sliced almonds
- powdered sugar
Instructions
- In a bowl mix the butter and light brown sugar. Mix until you have a mixture that contains a lot of air.
- Add the egg and mix until combined.
- Add the almond flour, almond extract, normal flour and salt. Mix until you have a thick paste.
- Put a good spoonful of almond mixture on each croissant. Top with some almond shavings.
- Put the croissant in the oven for 5 minutes on 180 degrees celsius.
- Let them cool down a bit and sprinkle some powdered sugar on top of them. And enjoy!
