Ingredients
- 200 grams of bastogne cookies
- 90 grams of melted butter
- 800 grams philadelphia (cream cheese)
- 250 grams of sugar
- pinch of salt
- 75 grams of flour
- 1/2 lemon juice
- 1/2 lemon zest
- 300 grams of creme fraiche
- 6 eggs
- 2 teaspoon of vanilla extract
- red food colouring
- Optional: whipped cream, raspberries and powdered sugar
Instructions
- Put the bastogne biscuits in a chopper and crush the biscuits into crumbs.
- Add the biscuit crumbs to the melted butter and mix till combined.
- Put the pie crust mixture in a round baking tin of 28 cm. And bake on 180 degrees celsius for 5 minutes.
- Let it cool down and put the oven on 225 degrees celsius.
- In a bowl mix in the philadelphia, sugar, salt, flour, lemon juice, lemon zest, creme fraiche, eggs and vanilla extract. Mix the mixture until there are no lumps left in the batter.
- Divide the batter into 3 equal parts. With red colouring you make 1 batter light pink, and make 1 batter dark pink.
- Now we are going to put the batter in the baking tin one by one. You start with a large scoop of white batter, then a large scoop of light pink batter, then a large scoop of dark pink batter. And so you keep going in this way until all the batter is gone. Make sure you have a little dark pink batter left to make a heart at the end. (see the tiktok video)
- Now you are going to make the pattern with a skewer. You do this by drawing a line from the inside out and a line from the outside in. This is how you keep doing this over and over.
- Put the cheesecake in the oven (225 degrees celsius), and turn down the heat to 120 degrees celsius.
- Bake the cheesecake for 45 minutes. The center of the cheesecake must be a little jiggly.
- Let the cheesecake cool and place it in the fridge to set for 1-2 hours.
- Add some whipped cream, raspberries and powdered sugar on top. Enjoy!
