S’mores bites

Do you like marshmallow fluff? Then you really have to try this recipe, but be careful because it is really eaten in one go. The recipe has a shortbread base, topped with homemade marshmallow fluff. Finally, a chocolate ganache! It’s super tasty and definitely worth a try. You can make 8-12 servings with this recipe.

Cooktime: 25 minutes

Ingredients

For the shortbread base:

  • 150 gram softened butter
  • 75 gram granulated sugar
  • 200 gram flour
  • pinch of salt

For the marshmallow fluff:

  • 3 egg whites
  • 225 gram granulated sugar
  • 75 ml water
  • 1 tsp honey
  • 3 tsp vinegar
  • 1 tsp vanilla extract

For the chocolate layer:

  • 180 gram milk chocolate
  • 80 ml cream

Instructions

For the shortbread base:

  1. Mix all the ingredients in a bowl. Make sure the butter is softened/ room temperature. Knead until you have a nice ball of dough. Now divide the dough on a small traybake or baking dish. You could possibly put baking paper underneath!
  2. Now bake for 25 minutes on 180 degrees celsius, till golden brown. The bottom may still be a little soft when it comes out of the oven. This does not matter, because the bottom just needs to cool down a bit. Put it in the fridge and move on to the next step.

For the marshmallow fluff:

  1. Add 150 grams of sugar to 2 egg whites. Heat this mixture in a bain-marie until the mixture has reached 50 degrees Celsius and the sugar has almost dissolved. Now move the heated mixture to a heatproof bowl.
  2. Now add 1 egg white to this heated mixture and beat until stiff peaks are formed.
  3. In a saucepan mix 75 grams of sugar with water, honey and vinegar. Bring this to a boil until the sugar syrup is 114 degrees Celsius. Make sure not to stir during this process.
  4. When the sugar syrup has reached the right temperature, remove it from the heat. Let cool for 20 seconds and then slowly pour into the whipped egg whites. At the same time that you pour, make sure you are whipping the egg white mixture.
  5. Keep beating until everything has cooled down again. This is very important, because it really gives you the perfect marshmallow fluff. Now spread the marshmallow fluff over the shortbread base.

For the chocolate layer:

  1. Melt the milk chocolate and add the cream. Stir well until you have a chocolate ganache. You can always add more cream if the mixture is too thick.
  2. Let it cool for 20 seconds and pour over the marshmallow fluff. Spread it carefully with a small spoon and put the s’mores bites in the fridge.
  3. Now wait about 30 minutes until the chocolate layer has hardened. Then you can cut it into pieces.
  4. It will fall apart a bit, but it will be super tasty! Enjoy!
