Strawberry Lemon Cake

A dutch farmers cake with a touch of lemon and fresh strawberries! So delicate, you need to try this! Perfect for your any occasion and so easy to make. You can make 1 loaf cake with this recipe (9 servings).

Cooktime: 1 hour

Preptime: 30 minutes

Ingredients:

  • 200 g granulated sugar
  • 250 g softened salted butter
  • 4 eggs
  • 2 lemons
  • 250 g flour
  • 8 g baking powder
  • 40 g Greek yoghurt
  • 1 tsp vanilla extract
  • 1 cup chopped strawberries
  • 150 g powdered sugar
  • 5 tbsp milk

Instructions:

  1. Mix the butter with the sugar until fluffy.
  2. Add the eggs one at a time while continuing to mix on low speed.
  3. Once mixed, add the yogurt, vanilla extract, lemon juice from 1 lemon and lemon zest from 1 lemon. Stir this well.
  4. Then add the flour and baking powder. Mix these into the batter with a spatula and do not stir too long, otherwise the cake will become tough later.
  5. Now add the chopped strawberries to the batter and gently stir it through.
  6. Transfer the batter into a cake tin and bake for 1 hour and 15 minutes at 165 degrees Celsius. Make sure the cake tin is greased with melted butter and then dusted with flour.
  7. Check with a skewer whether the cake is cooked inside. You can see this by checking whether the skewer comes out of the cake completely clean.
  8. Before removing the cake from the tin, let it cool for 30 minutes.
  9. For the icing layer, we mix the icing sugar with the milk and lemon juice from 1/2 lemon. Make sure that the icing is nice and white and not too drippy. Put the icing on the cake, decorate the cake with some strawberries and lemon.
