Brownie cookies

My favourite cookie of all time! The cookie has a perfect brownie texture. Soft on the inside and flaky on the outside. Tastes super rich like chocolate, the perfect snack or dessert!

Cooktime: 10 minutes

Preptime: 20 minutes

Ingredients

  • 160 gram dark chocolate
  • 40 gram butter
  • 60 gram white caster sugar
  • 10 gram granulated sugar
  • 1 egg
  • 55 gram flour
  • 2 gram baking soda
  • pinch of salt

Instructions

  1. Preheat the oven to 180 degrees celsius.
  2. Melt the chocolate with the butter au bain marie.
  3. Once this mixture has melted, let it cool. We do this so that the egg does not clot. (the chocolate butter mixture must still remain liquid)
  4. In a bowl, mix the sugar and egg until all the sugar cubes are dissolved.
  5. Add the butter-chocolate mixture and mix until well combined.
  6. Mix in the flour, baking soda and salt with a spatula.
  7. On a baking tray with baking paper, make 6 cookies of the cookie batter. (The batter should resemble brownie batter, not thick cookie batter.)
  8. Put the cookies in the oven for 10 minutes.
  9. Remove them from the oven and let them cool for 5 minutes and enjoy!
  10. You can still choose to put your favourite ice cream between two cookies. This is how you make the most delicious cookie sandwich!
