Ingredients

For the Blondie Batter:

  • 2 Medium Eggs
  • 170 g Unsalted Butter (Melted)
  • 125 g Granulated Sugar
  • 75 g Light Brown Soft Sugar
  • 115 g Plain Flour
  • 2 tsp Vanilla Extract
  • 125 g White Chocolate (Melted)
  • 4 tsp Chai Spice

For the Frosting:

  • 110 g Unsalted Butter (Room Temperature)
  • 1 tsp Vanilla Extract
  • 275 g Icing Sugar
  • 2 tsp Milk

Instructions

Blondie Batter:

  1. Preheat your oven to 180°C (350°F).
  2. Melt unsalted butter and white chocolate together using a double boiler or the microwave.
  3. In a separate bowl, beat eggs, granulated sugar, and light brown sugar until well combined.
  4. Stir in the melted mixture and vanilla extract into the egg mixture.
  5. Gradually add plain flour and Chai spice to the mixture, ensuring it’s evenly incorporated.
  6. Pour the blondie batter into a greased and lined baking pan.
  7. Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs (the exact time may vary depending on your oven).
  8. Allow the blondie to cool completely in the pan before applying the frosting.

Frosting:

  1. In a separate bowl, beat softened unsalted butter with vanilla extract until it becomes creamy.
  2. Gradually add powdered sugar, continuing to mix until you achieve a smooth and creamy consistency.
  3. Whip the frosting for a few more minutes until it becomes light and fluffy. Optionally, add a small amount of milk if needed to make the frosting smoother.
  4. Once the blondie has cooled, spread the light and fluffy frosting evenly over the top.
  5. Cut into squares, serve, and enjoy!
