Preptime: 2 hours en 30 minutes
Cooktime: 20 minutes
Ingredients
Dough:
- 125ml Regular milk (about 1/2 cup)
- 13g Granulated sugar (1 tablespoon)
- 200g All-purpose flour (approximately 1 2/3 cups)
- Pinch of salt
- 4g Instant yeast (2 teaspoons)
- 22g Regular butter (1 1/2 tablespoons)
Pastry cream:
- 250ml milk
- 2 egg yolks
- 50g granulated sugar
- 20g cornstarch (or custard powder)
- 1 teaspoon vanilla extract
Instructions
Making the dough:
- In a mixing bowl, combine the instant yeast, granulated sugar, and warm regular milk. Stir to activate the yeast, and let it sit for a few minutes until it becomes frothy.
- In a separate bowl, combine the all-purpose flour and a pinch of salt.
- Pour the yeast mixture into the dry ingredients (flour and salt) and stir to form a dough.
- Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
- Once the dough has reached the desired consistency, incorporate the regular butter into the dough and continue kneading until the butter is fully integrated.
- Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise for about 1-2 hours, or until it has doubled in size.
Shaping Donut Pop Balls:
- After the dough has doubled in size, punch it down to release the air.
- On a lightly floured surface, roll out the dough to about 1/2 inch thickness.
- Use a round cookie cutter or a small round shape to cut out small circles from the dough.
- Take each small circle and roll it into a ball in a baker’s fashion. To do this, place the circle in the palm of your hand, fold the edges towards the center, and pinch the seam to seal it, forming a smooth ball.
- Place the formed dough balls on a baking sheet lined with parchment paper. Leave some space between them to allow for rising.
- Cover the dough balls with a clean kitchen (slightly wet) towel and let them rest for about 15-20 minutes to puff up slightly.
Frying Donut Pop Balls:
- Heat a pot or deep fryer with oil to 180 degrees Celsius (350 degrees Fahrenheit).
- Carefully lower the donut pop balls into the hot oil using a slotted spoon or a spider strainer, ensuring not to overcrowd the pot. Fry them in batches if necessary.
- Fry the donut pop balls for about 2-3 minutes, or until they turn golden brown and become puffy.
- Be sure to flip the balls over with the slotted spoon or strainer so that they cook evenly and maintain a round shape.
- Once they have reached a beautiful golden color, use the slotted spoon or strainer to remove them from the oil and place them on a paper towel-lined tray to drain any excess oil.
- Let the donut pop balls cool for 1 hourd before proceeding to fill and glaze them.
Pastry Cream for Donut Pops:
- Heat the milk in a saucepan over low heat until it’s warm but not boiling. Remove the pan from the heat as soon as you see steam rising from the milk.
- In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes lighter in color and airy.
- Add the cornstarch (or custard powder) to the egg yolk mixture and whisk well until everything is thoroughly combined.
- Gently pour the warm milk into the egg yolk mixture while continuously stirring to prevent the eggs from curdling. Do this gradually to temper the mixture.
- Pour the mixture back into the saucepan and place it over low heat. Stir continuously until the pastry cream thickens. This usually takes a few minutes. Be sure to keep stirring to avoid lumps.
- Once the pastry cream reaches the desired thickness, remove the pan from the heat and add the vanilla extract. Stir well to incorporate the vanilla. Let it cool down completely!
Filling and Glazing the Donut Pops:
Filling:
- Make sure both the donut pops and the pastry cream have cooled before you begin.
- Fill a piping bag with a narrow, pointed tip with the pastry cream.
- Insert the piping tip into the side of a donut pop and fill it gently with the pastry cream. You can also use a small knife to make a small incision and pipe the cream inside.
Glazing:
- You can make pink glaze by mixing powdered sugar with a small amount of milk and pink food coloring until you achieve the desired color and consistency.
- Dip each filled donut pop into the pink glaze, ensuring it’s evenly coated.
- Place the glazed donut pops on a wire rack to allow any excess glaze to drip off.
- Let the glaze set for a little while before serving your delicious homemade donut pops.
