
If you like thin pancakes and tiramisu, then this is the perfect match. It is an easy recipe, which takes the longest to bake the pancakes. It is really great fun to make. You can eat it as a dessert for Christmas. Or you can make it as a birthday cake. At my house it was gone within 20 minutes because it was so delicious. You can make 8 servings with this recipe.

Ingredients
For the tiramisu cream:
- 3 eggs
- 500 grams of mascarpone
- 1/2 teaspoon salt
- 120 grams of sugar
For the crêpe mixture:
- 4 eggs
- 600 ml milk
- 60 grams of sugar
- 230 grams of flour
- 1/2 teaspoon salt
- 20 grams of melted butter
- (if you want 1 espresso shot)
For the decoration:
- cacao powder
Instructions
- Separate the egg yolk from the egg white. And put the egg yolk in a large bowl and add the mascarpone and salt.
- Now mix this together to a light mixture. It should be almost as thick as whipped cream.
- In another bowl, beat the egg whites with the sugar until stiff. Add 1/3 of the beaten egg white to the mascarpone mixture and mix gently. Then fold the remaining 2/3 into the mascarpone mixture.
- Now put this in the fridge, then we’re going to make the crêpes.
- Put all the ingredients for the crêpes in a bowl and mix the batter until there are no lumps.
- Now bake the crêpes one by one in a pan. Make sure your pan is hot and that you are making very thin pancakes. To speed up the baking process, you can bake with two pans at the same time.
- Place the crêpes on a plate and let them cool completely, then we can build the cake with the tiramisu cream.
- Put 1/3 part of the tiramisu cream in a piping bag, we will use this for decoration, so leave it in the fridge for a while. We will now use the other 2/3 part.
- We are now going to build the cake, put down a crepe each time and spread some of the cream on it. Repeat this process until all the crepes are used up.
- Cut off the tip of the piping bag and pipe the cream into nice dots on the cake.
- Last, sprinkle cocoa powder on the cake until all the cream on top is covered.
